SMOKED PORK RIBS WITH BARBECUE SAUCE

1 cup 240ml of barbecue sauce

1 tablespoon cumin powder

1 tablespoon chili powder

1 tablespoon paprika powder

Salt and freshly ground pepper to taste

In a small jar, make a seasoning by mixing together the cumin, chili pepper, paprika, salt and black pepper. Cover the pot and shake it so that the seasoning is very homogeneous. Spread the prepared seasoning on both sides of the pork rib piece only. Brush the pork ribs with the barbecue sauce. Reserve the remaining sauce.

Put the whole pork rib on the highest rack of the grill, and if desired, cover the bottom rack with aluminium foil. After placing the pork ribs on the grill, turn down the heat and let them grill for 1 hour. It is not necessary to turn the piece. If you are using a grill that has a lid, close the lid while the pork ribs are grilling.

Remove the foil and brush the barbecue sauce all over it. Grill for about 5 minutes more. Serve whole or cut into individual pieces.
